This was one of the very first quinoa dishes that I had tried! I think the first dish I tried was peppers stuffed with quinoa which is a little bit more elaborate than this dish! Now coming to this recipe, I think this is one of the quickest dishes to put together and hardly requires any cooking expertise. It is also a recipe that never fails to impress and one that you can experiment with and create a number of variations 🙂
Along with the ease and simplicity, if you can add in the nutrition level of the dish with beans and quinoa, I am pretty sure you will want to try this for yourself! A quick note though, if you have never cooked quinoa, there is nothing to worry 🙂 It is pretty much the same way that you would cook rice! I do have a post that quickly describes the procedure so you might want to refer to that one! And although I tried this with quinoa, you could try the same with rice or broken wheat too if you wish!
Ingredients
- 1 1/2 cups cooked quinoa
- 1/2 medium red pepper
- 1/2 medium green pepper
- 1/2 medium onion
- 1 can of black beans
- 3 cloves garlic
- 2 tsp oil
- 1/2 tsp red chilli powder
- 1/4 tsp cumin (jeera) powder
- 3/4 tsp salt
- 1/4 lemon

Method
- Chop the peppers and onion finely. (Else it wont blend in well with the black beans!) Also chop the garlic cloves finely.
- Add 2 tsp oil to a medium sized saucepan and once it is heated add in the onions. Saute well and wait for the onions to cook a little. Add in the garlic and again saute well. Once you get the nice aroma of garlic, add in the peppers.
- Once the peppers get a little soft, add in the canned black beans. Add chilli powder, cumin powder and salt and mix well.
- Add in the cooked quinoa and mix everything together well! Adjust the seasoning to your taste, squeeze in the lemon and let it heat up a little before serving.
