The combination of simple spices like black pepper and cumin seeds coarsely ground up add so much flavor to any dish! You don’t need a ton of exotic ingredients to create a nice quick, tasty, wholesome meal. Also with a little creativity you can add a new look-and-feel to any vegetable 🙂 I think this recipe is testimony to both the above statements.

I have used a classic combination of cauliflower and capsicum here! The health benefits of using cauliflower are so numerous. It is a low-calorie veggie and has a ton of vitamins and minerals. Cauliflower also has a lot of anti oxidants. So if you have passed over cauliflower in the past – give this recipe a try! It is sure to make you change your mind! Plus this whole thing comes together in under 30 minutes. How great is that! Personally I like to prepare something really quick like this for weeknight dinners. Not only is this healthy but it helps me stay on the budget!



Black Pepper Cauliflower
Ingredients

1 medium-sized cauliflower

1 small green pepper/capsicum

Pinch of turmeric

2 tsp cumin seeds
-
15 black pepper corn (adjust according to your taste)

1 – 2 tbsp ground nuts

1 inch piece of ginger

1 clove garlic
-
1 Thai green chilli
- 1 tbsp dry unsweetened coconut/ fresh grated coconut

1 cup finely chopped cilantro

1 tbsp oil

Salt to taste
Method

Separate the cauliflower florets.Chop the capsicum into bite-sized pieces.

Take a large bowl with warm water. Add a pinch of salt and turmeric. Add the cauliflower florets to this and let it sit for 5 min. Drain water and wash the florets couple of times with cold water.

Take a large pan. Add the cauliflower florets. Sprinkle some salt and let this cook on low heat with lid closed (Don’t over cook the cauliflower – it tastes great if it still has a crunch)

For preparing the spice mixture, chop the ginger, garlic and green chilli coarsely.Add these to a mortar pestle. Add black pepper corn, cumin seeds, coconut and groundnuts also to this.Pound all these together well till you get a coarse mixture.

In another smaller pan, heat 1 tbsp oil. Add this spice mixture and chopped cilantro and sauté for a few minutes.

Then add the chopped capsicum to this and cook this till the capsicum gets cooked. Turn off the heat.

Once the cauliflower gets half-cooked add this capsicum and cooked spice mixture to it. Mix everything well and let it cook on medium high flame for about 5 mins to let any water evaporate.
