Oats Wheat Kohlrabi (knolkhol) Muthia (Steamed Savory Bites)

Back with another kohlrabi recipe 🙂 I love using this vegetable a lot because it just goes well with a lot of flavors and cooks quickly. Ok let’s not forget it’s healthy too 😉 In my previous blog post I mentioned that planning something for the evening snack can be difficult. Something to have with tea and relax! This Muthia fits right into that slot for snacks that are super yummy, easy to prepare, tasty, and healthy!

Preparing Muthia is not a very hard thing – just requires throwing in some wheat/oat/chickpea flour(besan) together with some spices and veggies and steaming the dough. Once the dough is steamed, you chop it into bite-sized pieces and drizzle some seasoning on top 🙂 How easy does that sound! The preparation takes less than 10 minutes and then you let the steamer do its job. I love recipes like this!!

Muthia is a traditional dish from Gujarat. It’s generally prepared using chickpea and fenugreek leaves (methi) or lauki (bottle gourd). I tweaked it and added oats and wheat to add a variation. Plus a new way to try a vegetable is always great, right?

Oats Wheat Kohlrabi (knolkhol) Muthia (Steamed Savory Bites)

Ingredients
  1. 3/4 cup wheat
  2. 1/2 cup oats
  3. 1/4 cup chickpea flour/besan
  4. 1/2 inch piece of ginger
  5. 1 green chilli (optional)
  6. 1 tsp red chilli powder
  7. 1 tsp cumin powder
  8. 1/2 tsp coriander powder
  9. 2 tbsp yogurt
  10. 2 kohlrabi
  11. 2 tbsp oil
  12. 1 tsp mustard seeds
  13. 1 tsp sesame seeds (optional)
  14. Pinch of hing (asafoetida)
  15. 1 tbsp fresh grated coconut
  16. Handful of chopped cilantro

    Method

  1. Peel the kohlrabi skin. Grate the kohlrabi using a grater into a large mixing bowl.
  2. Pound the ginger and chilli to get a coarse paste.
  3. To the same mixing bowl add the flours, salt, ginger chilli paste and dry spices, 1 tbsp oil, yogurt and knead together. Don’t add any water unless needed and add yogurt 1 tbsp at a time. Try to form a sticky dough.
  4. Now divide the dough into 4 or 5 parts and shape each part into a log shape.
    Place them in a steamer basket and steam on medium high for 30 minutes till the dough is totally cooked.
  5. Let the dough cool, then chop the logs into 1 inch pieces.
  6. Take a large saucepan and heat 1 tbsp oil in it. Add 1 tsp mustard seeds and sesame seeds(optional). Let the mustard seeds splutter, then add the Hing and sauté well.
  7. Now add the chopped Muthia pieces and let it roast in the pan for 5 minutes. Turn the pieces around so it gets evenly roasted. Serve hot with some freshly grated coconut or chopped cilantro.
