Raw Banana Pepper Fry

I love using plantains. They are super easy to cook and taste amazing! All you need to do is peel the skin, chop it up and cook it with some spices 🙂 in less than 15 min you will have an amazing side dish ready. How cool is that!

Plantains are starchy vegetables – so I don’t buy them all the time. I probably get it once every two or three week! I have tried so many recipes even with the plantain peel; one of it is up on the blog – Raw Banana Peel Chutney! Do give that a try if you have plantains at home 🙂

I generally have one or two sides of vegetables every meal. This could be a salad or side dish or a veggie soup or anything else that I can put together quickly! I think cooking up veggies with a few simple spices is a great way to get your family to try new vegetables 🙂
In this recipe, I love the mild spiciness from the black pepper and chilli. Here I have chopped the plantain into thin discs. While cooking I ensured that each plantain piece got a little crisp! For doing that ensured that I wasn’t using a lot of water. I also kept stirring the veggies every few minutes so that all the pieces are in contact with the bottom surface of the pan and can get a little crisp. So what I ended up with is plantain pieces slightly crunchy on the outside and soft on the inside! That is so amazing!! 🙂
