Spinach, bell pepper patties (No Potatoes/Eggs) – Hara Bhara Kababs

I love all things potato! I am sure there are very few people who don’t ๐Ÿ™‚ But potato is really starchy and so I always try to avoid it in my cooking. Since I started trying to be creative in my cooking, I don’t think I miss out on those potato dishes a lot ๐Ÿ™‚ The only dishes where I missed it were those which called for potato to bind all the good stuff together! Yeah, burgers and patties! I don’t ย eat eggs and I don’tย like cheese either, otherwise these would have been really great to use in patties ๐Ÿ™

Warm Broccoli chickpeas and pepper quinoa salad with lemon ginger dressing

Cooking with quinoa is so easy, donโ€™t you think? If you have not yet tried any quinoa recipes, it is not too late to start! You can use it in almost any recipe that calls for rice – think of burritos, mexican bowls, salads, veggie wraps, Indian rice dishes, and even puddings ๐Ÿ™‚ No one will know when you sneak in all that nutrition into a traditional recipe by just swapping the rice for quinoa! Personally, my quinoa journey started the same way – I used quinoa instead of rice in all the Indian dishes I knew ๐Ÿ˜€ ๐Ÿ˜€ Another thing is that if you just have some cooked quinoa on hand, you can put together an amazing weeknight meal in minutes!
