Rava Oats Paddu/Paniyaram (Instant)

Usually my Sunday breakfast consists of dosa/uthapam. I have already posted several instant dosa recipes – Oats Wheat Dosa (With Avocado) and Oats Mixed Vegetable Utthapam. This week I wanted to change up the routine a bit 🙂 I tried paniyaram/paddu. Again with instant batter 🙂 I have an oats buckwheat paniyaram recipe already on the blog. This time I tried a rava oats paniyaram! The texture/consistency is a bit different than the wheat one because adding wheat makes the paddu a little dense. The wheat ones are also definitely more filling 🙂

Oats Mixed Vegetable Uthappam (Instant)

Uthappam is one of the easiest breakfast dishes that you can try. With some dosa batter and chopped veggies on hand, you can create a delicious breakfast in minutes. I am all about adding some wholesome ingredients like whole grains or vegetables in every meal – hence the mixed veggie oats uthappam!  I also feel that the quicker it is to prepare something, the more likely I will try it – So I opt for simple and quick recipe fixes.

Whole Wheat Banana Pancakes (No Eggs)

Most Sundays I end up with this huge dilemma about what to prepare for breakfast. Typically, most weekdays I end up having some kind of sandwich for breakfast and so I really look forward to having something different on the weekend. Something that is quick to prepare too! I don’t want to spend most of my morning just preparing breakfast 🙂 🙂 Thats when pancakes come to the rescue!

Microwave Khaman-Oats Spinach Dhokla

Khaman Dhokla is an Indian steamed savory cake made using chickpea flour/gram flour/besan. It is one quick, healthy treat that is loved by all! It is one of those classic dishes like Indian samosas. There a ton of variants and recipes already up on the internet for a lot of khaman dhokla recipes and other variants! But this is my take on it. I figured it had to feature on my blog since I make it practically every time I am hungry and want something super quick. There are a couple of pros and cons of using microwave to prepare dhokla. For the plus points – it is really easy, quick and is a great way to stay away from junk food when you are super hungry! On the other hand, like most quick shortcuts to Indian food, using a microwave just does not give the same texture as steaming the dhokla. That being said I still love this recipe 😀

Broken/Cracked Wheat and Cucumber Pongal – Diabetic Friendly Recipe

Pongal is an absolutely easy one-dish meal that can be put together really quickly, It is wholesome, healthy and  nutritious – Rice and lentils combined with really mild spices like pepper and cumin! I always look to add some whole grains in my diet – and hence I swapped the rice out for the cracked wheat! Believe me, the taste is still amazing! 🙂 Another thing I love to do is sneak in some vegetables – hence I added the cucumber. Now you might ask why cucumber? And there is no specific reason for that – I add in whatever veggies I can such as spinach, tomatoes or anything else I can get a hold of in my refrigerator. I have a quinoa-spinach pongal recipe already up on the blog! Check it out 🙂
