Sprouted Mung Beans Salad(Hesarakalu Usli/Sundal)

Mid-afternoon or evening snack is something that I end up not planning for at all! Somehow planning for breakfast, lunch or dinner takes up so much time or effort that there is hardly any time left to think of something for the evening. Unfortunately, what I realize is that I end up munching on whatever is available! So much for careful eating 🙁 So I have been deliberately putting some thought into what I can have in the evenings when I get home – something quick and fast that does not require a ton of work! If you are looking for some ideas – try having some fresh fruit or a quick south Indian kosambari (check out Sprouted Fenugreek seeds and raw mango kosambari  and Southekayi hasi sasive(cucumber in coconut-mustard sauce)) or a masala papad or try this awesome sprouts salad/usli/sundal 🙂

Bell Pepper and Cucumber Salad (Tangy cumin-lime dressing)

For a really long time I never liked salads 🙂 It was not that I hated salads, it was more like I wouldn’t try a salad unless it was practically the only thing available at some restaurant! (And that never happened 😉 ) The first time that I really thought about trying salad was when I was browsing through Pinterest. What grabbed my attention was not so much the recipe as the pictures! I am not sure if you would believe me if I said that I was drooling at salad pictures! Even now, after I have become an ardent fan of salads, the most appealing part of any salad is the wonderful colors and texture!

Warm Broccoli chickpeas and pepper quinoa salad with lemon ginger dressing

Cooking with quinoa is so easy, don’t you think? If you have not yet tried any quinoa recipes, it is not too late to start! You can use it in almost any recipe that calls for rice – think of burritos, mexican bowls, salads, veggie wraps, Indian rice dishes, and even puddings 🙂 No one will know when you sneak in all that nutrition into a traditional recipe by just swapping the rice for quinoa! Personally, my quinoa journey started the same way – I used quinoa instead of rice in all the Indian dishes I knew 😀 😀 Another thing is that if you just have some cooked quinoa on hand, you can put together an amazing weeknight meal in minutes!

Roasted Pumpkin Garbanzo Beans/Chickpeas Salad (Fall Recipe)

Somehow on cold winter days all I want to do is just sit indoors and munch on something the whole day! I really need to have a bunch of healthy snacks around to help to cut down on unnecessary junk snacking 😀 I think that not having a lot of junk food in my kitchen helps me stay on track. Anyway, lazy winter evenings also mean that I am a little reluctant to try recipes that involve a lot of prep work!! Salads are so easy and make such a wholesome meal – but it is something that I personally associate with summer months 😀 So I wanted to try something different – a salad that had a winter/fall appeal. And what could be better than a warm roasted pumpkin and garbanzo beans salad!! This makes a perfect fall recipe. Yaay!!
