As a kid, I was never fond of dried dates! You can’t blame me – dried dates are a little hard to chew and are not really sweet 🙂 But I do like fresh pitted dates, they are quite a treat actually!! When I started trying to be innovative in my cooking, for a long time it never occurred to me to make use of dates as a sweetener! But come to think of it now, dates are a natural choice to add some sweetness, right? It is packed with so much nutrition that it is actually a good idea to include it in one’s diet (Of course, in moderation 🙂 )
I actually first tried this recipe almost a year ago, but I never got a chance to take pictures or measurements! These energy bites look so absolutely delicious that I can’t help finishing them off even as I make them 🙂 This is a really simple and quick recipe – actually it is so simple that it can hardly be called a recipe! Even though the recipe looks so simple, the taste of the end product is absolutely delicious. These energy bites stay good for a few weeks when stored in an airtight container! (Kind of hard to not finish these off quickly though 🙂 ) You can serve them with warm milk for breakfast, or pack it up for a mid-morning or post-workout snack! Ingredients
- 10 pitted mejdool dates
- 1 – 2 tbsp dry coconut flakes/powder (unsweetened)
- 1 tbsp chopped almonds
Preparation Time: 5 min
Cooking Time: 0 min
Servings: 6 pieces
Method
- Take the dates in a bowl and use a spoon to mash it well. It is ok if it is a little lumpy!
- Mix the almonds and coconut in a plate. Shape the dates mixture into balls and roll it in the almond-coconut mixture.
