I love making pilafs for weeknight dinners because it is so easy to prepare. In under 30 minutes, you can put a perfectly delicious pilaf together. And the best part is that there are a ton of ways you can innovate with the flavors by using different veggies and grains. Cooking a pilaf is also probably the easiest way to include something healthy in your diet – in any pilaf recipe swap the white rice out for a whole grain such as brown rice, millets or cracked wheat!

Radish and Channa Kara Kuzhambu (Tangy gravy)

I realized I hadn’t put up any radish recipes on the blog – so I have a couple of recipes coming your way. The first one is a Kara Kuzhambu using radish and channa. Kuzhambu is a gravy dish from Tamil Nadu. There are a lot of varieties of Kuzhambu. I love Kara Kuzhambu in restaurants and wanted to give it a shot at home. The traditional Kara Kuzhambu is a tangy gravy with tamarind, tomatoes, and onions and doesn’t use a lot of veggies. But I knew I had to add in some veggies – so instead of the usual combinations like potato or brinjal, I tried something different to up the game 🙂 So here I am with this new recipe! If you  are a fan of the traditional kuzhambu and are wary of adding veggies in, think of this as just another side-dish! No matter what the name, the combination of radish and tamarind gives this curry a unique taste.

Rava Oats Paddu/Paniyaram (Instant)

Usually my Sunday breakfast consists of dosa/uthapam. I have already posted several instant dosa recipes – Oats Wheat Dosa (With Avocado) and Oats Mixed Vegetable Utthapam. This week I wanted to change up the routine a bit 🙂 I tried paniyaram/paddu. Again with instant batter 🙂 I have an oats buckwheat paniyaram recipe already on the blog. This time I tried a rava oats paniyaram! The texture/consistency is a bit different than the wheat one because adding wheat makes the paddu a little dense. The wheat ones are also definitely more filling 🙂

Hesarabele Southekayi Kosambari (Mung dal and Cucumber Salad)

This kosambari/salad is a part of any festival celebration in Karnataka! I love this kosambari because it’s super easy to make and also probably because I associate it with festivals, it tastes special. Normally apart from festival days, I never used to prepare this at home! But while I thinking about great evening snacks, it struck me that this is an amazing snack 🙂 You don’t have to prepare this for just festivals or special occasions, right?

Oats Wheat Kohlrabi (knolkhol) Muthia (Steamed Savory Bites)

Back with another kohlrabi recipe 🙂 I love using this vegetable a lot because it just goes well with a lot of flavors and cooks quickly. Ok let’s not forget it’s healthy too 😉 In my previous blog post I mentioned that planning something for the evening snack can be difficult. Something to have with tea and relax! This Muthia fits right into that slot for snacks that are super yummy, easy to prepare, tasty, and healthy!
